Made predominantly from Pinot Noir grown at our Chaytors Road vineyard, the gravel soils and coastal influence produce grapes with ripe, bright and fruity characters ideal for this wine. The Pinot Noir was picked especially for this wine at low brix and with crisp acidity. The grapes were pressed and the skins were removed immediately to achieve the lovely, pale pink colour. The juice was fermented in stainless steel tanks at cool temperatures with a specially selected, cultured yeast from Provence in the south of France.
