The Bourgogne Hautes Cotes de Beaune appellation was accredited in 1961. This white wine from here is made from 100% chardonnay grapes.  Aromas of white flowers combine with honey. Elegant and pleasant, it typically maintains a certain freshness.  Lively during its youth, it should pair very well with snails. It can embellish simple dishes like fish or wok seared vegetables. Slightly older, its roundness and increasing density will highlight richer dishes such as fish in sauce or crustaceans.
