This sparkling wine is made by the traditional methods where the fruit is whole bunch pressed and the resulting juice is fermented into a base wine. This base wine undergoes secondary fermentation in bottle to give the wine its “sparkle” Unlike traditional sparkling wines however the yeast from the secondary ferment is left in the bottle leaving the wine with a deposit of natural yeast
