Seppeltsfield's DP117 is crafted using the Palomino variety, renowned for its neutral flavour profile and suitability to dry Apera styles. Seppeltsfield produces small parcels of DP117 each year, which are then added to our Solero nurseries for aging and blending. Due to the influence of Flor yeast, DP117 is characterised by a bone-dry palate and distinctive aldehyde notes. After utilising only the very first cut of free-run juice and fortification with a neutral spirit, the DP117 Dry Flor Apera is matured in our Solero nurseries to an average age of 7 years.
