Only the best Cabernet and Sangiovese grapes are selected during the harvest and destined to Perpiero’s blend. All grapes are manually harvested once they reach the perfect phenolic maturation, and separately vinified. The fermenting juice undergoes a prolonged temperature-controlled maceration in stainless steel tanks, with frequent punch down to ensure an intense colour extraction, complexity and soft tannins. 40% Cabernet Sauvignon, 40% Sangiovese, 20% Cabernet Franc.
